A Culinary Connection- A Chef's Advice on Kids Eating Healthy

In keeping with the theme of eating healthy, eating together, let's look at an interview with the chef for our annual family Wellness Retreat, Linda Ott.
Linda cooks nutritious meals for us and naturally, she enjoys cooking as a hobby when not helping others make good dietary choices. Let's look at what she had to say in our December 2011 interview with Linda on how to involve your children and family into cooking.



 Here is an excerpt:

Q) How can parents get their children to integrate healthy food into their diets?

A) Healthy eating should start at birth. The more you expose them to healthy foods, the more likely they will choose to eat healthy. Remember, kids are watching what you eat as well--set the right example. There is a lot of comfort food, it’s truly a mindset of choosing and I think that if you talk to anyone in the healthcare industry there are things a person can do. I think that people aren’t going to change the way they eat, until they are ready to change their eating habits.

Q) What has worked for you to get your children to eat healthy?

A) I raised them the same. My first child was raised on a vegetarian diet until about three when she came to Wisconsin. My 15-year-old has always been an easy-to-please kind of eater. She will try anything and enjoys healthy food--not to say that she doesn't enjoy junk food but if I stock my kitchen with good food, she will choose to eat good food.
My 6-year-old, on the other hand, is my picky eater. As with most kids, her tastes are constantly changing--one week she loves carrots and the next week she won't touch them! We grow a lot of our own veggies in the summer and that seems to help to get her to try the veggies after she has worked so hard to grow them. She also loves to cook with me and here again, if she is involved, she will try it. She has her days, some days I make Mac’ n Cheese but she also eats broccoli. I sometimes have to pick my battles. During the summer she is more likely to eat vegetables because she could see how they grow. I also find that she is more willing to try new things if they are simple--not a lot of sauces or seasoning and she prefers to eat one food at a time so no casseroles for her. I find that when I cook with my daughter she is more willing to try it later.

Q) In closing, what are some tips or even advice to give to people who are trying to eat and cook healthier?

A) The web has made searching for recipes so much easier than scouting through countless cookbooks. From what I have read I have learned that fresh is best, but frozen is the best second choice. When I do my own freezing I do them in servings of four and when it’s for a family or yourself then fresh is the best idea to go.
Take baby steps; don't try to overhaul your diet overnight. Start by adding a new fruit or vegetable each week or every other day. Try practicing Meatless Monday. Whip up a new flavored smoothie each week.

The Benefits of Juicing

 We hope you are enjoying the juicing challenge. As you have seen, the limits to the different types of vegetables and vegetables you can add to green juice are limitless! One can try a variety of different vegetables, such as kale and cucumber, and fruits, such as lime and lemon, to make a personal version of green juice.

In addition, one of the most interesting things about green juice is how good it is for you and your body. Here are ten reasons why juicing is beneficial to your health:

1) The variety of fruits and vegetables are consumed at the same time mixed together rather than at meals

2) Skin feels rejuvenated

3) Cellular levels are improved

4) Energy level in the body is increased

5) Helps the body absorb the vegetable nutrients

6) Can help you live longer

7) High in fiber and helps keep a good weight

8) Purifies and cleans the body parts such as the liver and lower intestine

9) Vision, mental health, memory and other essential functions can be improved

10) It can help in a variety of ailments that deal with the heart, bone and joints

A Little Wrap-up

 Little Looks Back



Though NF month is now over, we held some GREAT events to make 2012 memorable! We really BLEW THE LID OF NF during May 2012 to let the world know about Neurofibromatosis and the great work done by the Littlest Tumor Foundation (LTF)! We kicked off the month with our awesome “Scream” picture letting the world know about Neurofibromatosis. Then we had our 24-hour up and down College Avenue in Appleton. We had some interesting interactions with the bar crowd…

Then we unveiled our insightful Human Health and Services with an insightful interview with Tracy and Sami. There was a great Derby Party here in Appleton to show support of NF research. Throughout May we papered races in the Fox Valley and Green Bay area to make people know more about our sam-i-am race.
We were on multiple news outlets in the Fox Valley area such as on three radio stations and three TV stations to let the world know about NF and our great events! We finally got to close NF month with our famous sam-i-am walk/run tumors I do not like them at Plamann Park. Here are some pictures that we can reminisce about the fun we had. Stay tuned for our next events coming up in June!

Little Holds a BIG Event Kids-on-Chemo Drive


It’s almost here! Our Kids-on-Chemo Drive is only a few short days away on Friday April 27, 2012 from 6 p.m. to 8 p.m. at the Paper Discovery Center in Appleton, Wis. We at the Littlest Tumor Foundation (LTF) have been working-around-the-clock to create a fun-filled event for everyone! Gather up all your friends and family as we raise awareness about children who live with the affects of chemotherapy due to neurofibromatosis (NF).
We will have fun activities for everyone. There will be games such as bag toss, paper making for all ages, faux tattoos, bubbles and a photo booth for all your pictures. There will also be a scavenger hunt for children as well as a mustache wearing event. Do you have a shout out or a wish to give to the NF community? There will be a wish wall for you to sign your thoughts and wishes.
There will be food and beverages available at our event. Stop by our juicer station to quench your thirst with one of our great recipes. Looking for a way to show your support for NF families?  You can shave your head to show solidarity with kids who have gone on chemo. You can also show your support for NF individuals and their families by getting purple hair extensions done by Aveda salon.
Don’t forget our Animation Launch that will be taking place. We’ll be unveiling our Animation Launch for the entire world to see!  So get all your friends and family members together for a night of fun and a good cause for the Kids-on-Chemo Drive at the Paper Discovery Center in Appleton!

Nutrition can be a very sticky subject when it comes to children and babies. They are some of the pickiest of eaters yet the most active {constantly learning new things, playing, running, swimming, jumping, falling, etc.}, and frustrated. Therefore proper nutrition is crucial for them.


Multiply the above by 10 and you have handicapped or ill child. These children are even more in need of nutrition and also that much pickier and more difficult to get to eat healthy food.



A really great way to pack in nutrition is with a blender and/or a popsicle stick. Fresh homemade smoothies are great because you can customize what goes into them. For instance you can add all kinds of local and organic fruits from the farmer's markets. You can make them really cold, really thick or not at all. You can also add very important supplements like Omega 3 oils, probiotics, even green powders and protein powders in small amounts so that the children won't even know it's in there.



If you child likes milk, add it. If your child is allergic or doesn't drink milk {mine don't} then add almond milk, lemonade or fresh squeezed orange juice and water as a base. You can also then add sweeteners or not, depending on your child's taste buds.



There are so many different kinds of things you can do with a blender that will amaze you AND your children. If you find a drink you and your child enjoys, then freeze it in a popsicle mold and eat it later while sitting in the sun.



I'm not going to go into which supplements are good for children with tumors or any other specific illness or disease because I'm not a doctor. But once you get the go-ahead for probiotics or algae or whatnot, ADD SOME DROPS OR TEASPOONS IT TO A SMOOTHIE.




MANGO PROTEIN RECIPE


- 2 cups Almond Milk


- 1 cup Frozen Mangos or any other fruit you enjoy.


- 1 Ripe Banana


- 1/2 c Green Juice {or greens powder}


- 1 Tbls Agave Nectar {optional}


- Rice Protein Powder {1/2 scoop}

- ADD PROBIOTICS OR FLAX OIL IF YOU'D LIKE



Mix in a blend until smooth. It should be REALLY creamy


tip: leave out the agave if you are giving it to little kids.



CANTALOUPE / WATERMELON FROZEN JUICE RECIPE


1 Cantaloupe {or watermelon}, ripe organic & in season


7 Ice cubes


1 Tbls agave nectar {optional}


Cut open the cantaloupe, remove the seeds and scoop out the fruit. Blend it on high for like 20 seconds. Then I put remained of ingredients in a blender and blended until it was smooth {with only a few ice chunks left}!


MY SON got mad at me and threw a tantrum when I told him to try it!!!! I said "just try it once and you'll be done" he tried it and then gulped the rest of it down. It was THAT good.




GREEN DRINK RECIPE

1 large slice (about 5 chunks) frozen pineapple
1/3c parsley or spinach
1/4 cucumber, peeled
1 juice of a lemon


1 sliver/chunk ginger root
1c fresh orange juice
1/2 dropper of liquid stevia OR 2 Tbls agave nectar

* any supplements you may need to add like say a protein powder?



BLEND TOGETHER IN BLENDER ON HIGH UNTIL REALLY SMOOTH WITHOUT CHUNKS.



If you can get your child to drink a small bit of this everyday you won't have to worry too much about "veggies" and eating their "green" foods. But of course it's always good to encourage eating vegetables and to get them used to eating "real" green foods.




POPSICLE RECIPE

2 large lemons
1/4 cucumber, peeled
3 Tbls agave nectar

1/4c water



BLEND TOGETHER IN BLENDER ON HIGH UNTIL REALLY SMOOTH WITHOUT ANY CHUNKS. Then add to popsicle mold and freeze. You can also do this with homemade fresh squeezed orange juice as well.



Have fun and remember to use fruits, vegetables and sweetners and liquids that your children already like to ensure they will drink it. You can easily add any greens like spinach or parsley or cilantro to a drink and mask it with the other dominate fruits or sweeteners or liquids.



Also remember to try new types of fruits. You never know, kids often don't like things the first time but then LOVE things the second or even third time around.
